Bangkok, March 2024 –Chatrium Residence Sathon is thrilled to announce Chef David Aparicio as the new Executive Chef for the award-winning restaurant, Albricias. With over22 years of culinary experience, including a decade in Michelin-starred restaurants in Spain,Chef David brings freshness and innovation to the restaurant.

From Spain's Basque region, Chef David Aparicio honed his skills under Chef Martin Berasategui, whose restaurants hold 12 Michelin stars. His style blends Michelin quality witha relaxed approach, focusing on bold flavors and playful presentation. Chef David plans to enhance the traditional Spanish cuisine at Albricias with humor and creativity, aiming for versatility and adaptability. He aims to astonish guests with innovativepresentations and playful dishes, steering away from the formality associated with traditional fine dining."Joining Albricias Restaurant is an exciting new chapter in my culinary journey. He plans to incorporate locally sourced ingredients while importing certain items from Spain to maintain authenticity.

Here are his new signature dishes, showcasing his creativity and expertise, giving diners a taste of what's to come. For starters, diners can enjoy "Our Iberic Fish", the Steak Tartare on Beef Marrow with Mustard Mayo and Baeri Caviar, the Ensaladilla de Txangurro, and LasRabas de Bilbao.

For mains, the Roasted Sea Bass on "Suquet" stands out, featuring wrapped Sea Bass with Smoked Pancetta, Caper Sauce, Fennel Cream, Curry Suquet, and Coffee. Seafood enthusiasts will delight in the Seafood Fideua, a traditional Spanish Seafood Paella made with short Vermicelli Pasta, Grilled Scallops, Squid, and Red Prawn. The Arroz Negro with Carabineros, Almejas en Salsa Verde offers a unique Black Ink Paella with Sofrito Sauce,Grilled Red Prawns, and Clams on Green Sauce. La Carrillera is a hearty choice, withslow-cooked Beef Cheek, Truffle Mashed Potato, and seasonal Mushroom Ragout with Green Asparagus .
