April arrives with a familiar shift in Bangkok. The air grows warmer. The pace softens. And with it comes a tradition that has long marked the season.
At Chatrium Grand Bangkok, this time is quietly observed through Khao Chae. A dish shaped by patience, balance, and care. It is something many return to each year, not out of habit, but because it feels right for the moment.
Khao Chae is not simply a dish. It is a way of slowing down.
Fragrant jasmine rice is served in chilled, flower-infused water, accompanied by a selection of traditional condiments. Each element is prepared with attention to detail. Sweet, savoury, and gently contrasting, they are designed to be experienced together, at an unhurried pace.
At Savio, the experience is offered with quiet consideration. The accompaniments include dried shredded pork, shrimp paste balls, stuffed sweet peppers, salted egg yolk, preserved radish, watermelon with dried fish, and fresh vegetables. Each element is prepared in line with traditional methods, allowing the character of the dish to remain intact.
For those who prefer a broader experience, Khao Chae also sits naturally within Savio’s daily buffet.
At lunch, the selection moves between Thai and international dishes, with seafood on ice, Japanese favourites, dim sum, and warm dishes that change with the day.
In the evening, the pace shifts again. The offering becomes more expansive, with additional seafood and international selections, alongside desserts that feel familiar to the season. Mango sticky rice, Thai sweets, and lighter finishes.
For some, Khao Chae is best enjoyed simply, on its own.
A curated set is available throughout the month, prepared with seven traditional accompaniments. It can also be taken away, carefully presented. Often chosen as a gesture for family, particularly during Songkran.
It is a small tradition, but one that carries meaning.
Songkran is often seen as a celebration. It is also a time of reflection, of returning, and of sharing.
Khao Chae sits naturally within this. Light, considered, and shaped by tradition, it offers a way to experience the season without needing to step away from it.
Khao Chae remains part of the experience throughout April, quietly present rather than set apart.
Khao Chae is available throughout April at Chatrium Grand Bangkok.
If you would like to experience it during your visit, arrangements can be made in advance, or simply upon arrival.
