Among the season’s highlights is the Thai Rock Lobster with Jellyfish, Lemon Confit, and Kaffir Lime, etcha’s playful nod to Italy’s Fritto di Mare. The result is a dish that feels both comforting and refreshingly original, a true celebration of craftsmanship, contrast, and connection.
